Aguapanela's The process of making "panela'
In the Valle of Cauca, Colombia we find some of the only producers of "panela." Trapiche is a large press machine that is used for the panela process to obtain the juice from the sugar cane plant. The juice is then cooked at a very high temperature and is formed into blocks or cubes. "Aguapanela" Literally mean Panela-water. Aguapanela is made by dissolving a block of panela into water. Most people drink it cold with lime or hot with milk or cheese. Aguapanela is the traditional and most common drink in Colombia.
